I just fried some Oysters using my mom’s recipe…drain, dip in seasoned flour, then egg, then soft white bread crumbs. They were good but I’m open to other ideas for the next batch.

Japanese panko. Cover oyster with flour then dip in egg then panko. This is the best I promise.

    This is southern, and the way my family has done it for ever…..use Saltine Crackers….and Ritz Crackers…

    Breaded Oysters Southern Style
    1 pint fresh oysters
    3/4 cup cream
    1 cup Ritz cracker crumbs
    1 cup saltine cracker crumbs
    Worcestershire sauce
    Black pepper
    1/2 cup melted butter

    Mix cracker crumbs and the melted butter. Grease pie plate or casserole. Spread a layer of crumbs on plate, then a layer of oysters, half of the cream mixture, a few shakes of Worcestershire sauce and pepper. Roll the oysters around till covered with breading…. then deep fry

    japanese panko crumbs are the "rolls royce" of breading material.the most oil reistant of all.

    Use Japanese style Panko crumbs for a crispy outcome. Cracker crumbs work great if you can get them fine enough. A surefire way of doing that is to place crackers in a 1 gallon zip lock bag and drive over them two ways with a 3/4 ton pickup truck. This is an actual Heloise hint that really works. It was especially funny when the neighbors asked what I was doing and I kept my best poker face and said "Making oysters for dinner, what does it look like?"

    I soak them in milk and tabasco for an hour or two. Drain and toss in cornmeal. Fry up at 350 f.
