The best size for eating are 1-1¼ lb. ones.  Larger ones can be musty and have a tough shell.  For a big appetite, get 2.

If it&#039;s alive and you&#039;re going to boil it, it only takes about 5-7 min, depending upon size.  If it&#039;s already steamed, I suggest you just steam the claws and tail on stovetop. (make stock w/ the rest)  You can lay the legs on a cutting board and roll w/ a rolling pin... meat will come out, too, that you can use to make Lobster Bisque (along w/ that homemade stock).&lt;br&gt;&lt;b&gt;References : &lt;/b&gt;&lt;br&gt;</description>

Pull them out and let them cool 5 min.   Cut a slit on the belly side (not all the way through) from the tip of the tail to the base of the head.  Serve.

Most of the meat is in the tail and claws.  However, with diligence and a pair of nut crackers and a nut pick, you can find meat in other parts of the lobster (legs included).  Serve with lemon wedges and melted butter.  Lobsters are sold 1 pound to 3.5 pounds.  The size does not effect the taste.
