You don’t. Literally all you need to do is heat it through. Alton Brown from the food network did a show about reheating seafood. He says the best way to do this so that you are not overcooking is to wrap it in a lot of wet paper towels and nuke it. You may be able to find more info regarding this on the Food Network Site.

i wish to buy live lobsters and crabs and keep them in a tank till we cook them camproceedure ie do you use sea water and what temperature you keep it at, any other things you should add?
how long after capture can they go without feed?

Okay it’s not worth it….To much can happen to them.Your best bet is to buy them when u plan on eating them.Plus be prepared to hear them scream when u put them in boiling water alive.
I get mine at Safeway. Albertsons has them too. They are so good. I toss mine with some pesto and top with more Parmesan, asiago, and Romano. It’s such a delicious easy meal.

what color should lobster tail be when you buy it please help i need to no !
It depends on two factors – one is the area of the world it comes from and the temperature of the water and two is whether you are buying raw lobster (live) or cooked. For example: North Australian tails are emerald green, while New Zealand tails are scarlet, and Brazilian, West Australian, Tristan and South African tails are normally a brown/light coral color. Canadian or New England tails are a bright, deep coral. Cooked Lobster Meat should always be opaque white. Hope that helps!
